WHere is a home-style version of a cocktail from a new drinks list. Designed as a batch prepared mix that is packed with flavours associated with Christmas time, which makes it ideal for a holiday party. Reserve the remaining syrup for breakfast cocktails, desserts, or to mix another batch of the drink.

To make the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Drink (makes 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Method
For the Syrup: Place the listed ingredients inside a pot, bring to a simmer, agitating until the sugar dissolves. After that, take off the burner and let it to cool fully. Pour into a sterilised bottle, cap it and store in the fridge, where it will keep for around a month.
To make Cocktail Base: Mix all the spirits and syrup into one big jug, leave to sit for one hour, then pass it through preferably using cheesecloth, to ensure it's completely strained.
For serving: Pour 85ml of the cocktail base to a mixing glass packed with ice, gently stirring gently for about 60 seconds to cool it down. Filter into an frosted cocktail glass or a similar vessel, garnish with some cranberries and finish using a quick spritz of the essential oil over the top.
